Sweet Potato Plate

Delicious and Healthy
Sweet Potato Plate

Serves 4
2 large sweet potatoes baked (can microwave)
1 can crushed pineapple drained
1 red bell pepper seeded and chopped
1 can black beans, rinsed and drained
1 Avocado peeled and seeded and chopped
2 Tablespoons lemon juice
1 Tablespoon balsamic vinegar

Bake sweet potatoes in the microwave or oven.
Mix Pineapple, red bell pepper, beans, avocado, lemon juice and vinegar in a bowl.
Mash sweet potatoes on plates and top with Pineapple/bean mixture.

You can cook sweet potatoes ahead and warm them up before serving.
The pineapple/bean mix is also excellent over greens for a great salad.
