Peanut Butter Caramel Cookie Sandwiches




Peanut Butter Caramel Cookie Sandwiches

1 ¼ cups all purpose flour
¾ teaspoon baking soda
¼ teaspoon salt
½ cup peanut butter
½ cup sugar
½ cup brown sugar
1 egg
1 teaspoon caramel dip or topping

Stir together flour, soda and salt. Beat butter and peanut butter for 30 seconds. Add sugar and brown sugar. Beat till fluffy. Add egg and caramel beat well. Add dry ingredients to beaten mixture and beat til well blended.
Shape dough into 1 inch balls. Place on ungreased cookie sheet. Press crisscross makings with a fork. Bake at 375 degrees about 10 minutes or until done. Cool 1 minute before removing to rack. When cooled spread filling between cookies.

Peanut Butter Caramel filling
1 cup powdered sugar
3 Tablespoons peanut butter
2 Tablespoons butter
1 1/2 teaspoon caramel dip or topping
stir together and add more caramel if needed to make it smooth enough to spread. Keep it in the fridge for a special treat anytime

Spread between two peanut butter caramel cookies

Variation
for fast treat when you are in a hurry.

Spread this filling between two Graham, soda or Ritz Crackers! MMM
